REFRESHING QUINOA SALAD (Andean Tabouli) 1. Needed: 1 cup "washed and ready" Quinoa; 1-1/2 T. fresh lime juice; 1/4 tsp. salt; 1 pinch black pepper; 1 jalapeño pepper, seeded and chopped; 1/4 cup olive oil; 1/2 cup finely chopped green onions; 1 cucumber peeled, seeded, and chopped; 1 medium tomato, seeded and chopped; 1/3 cup chopped cilantro.
